TRADILEVAIN  is an apparatus that is used to produce and store liquid sourdough with impeccable accuracy.
With 3 different volumes, it is innovative in its operating principle. Mixing takes place using a built-in submersible screw, providing homogeneity and mass stability. This mixing system does not need to be cleaned, since the auger itself is located deep in the tank.

The tank is equipped with a large sealed lid that prevents oxygen from entering (anaerobic conditions), fully opening for easy loading flour and hot water (45°). Made entirely of stainless steel, the machine does not require special care (no need to clean scrapers or mixer blades).

The refrigeration unit allows you to control the temperature of the sourdough during various production cycles.

There are 2 drain cocks in the machine: an upper hole corresponding to a safe level (to leave minimum amount of head starter), a lower hole that allows you to completely empty the tank.
