Base model aluminum sealed chambers with an anodized aluminum base frame and 40 mm high insulating polystyrene foam panels covered with white pre-painted aluminium; they can be supplied with one or more doors and are available in a version for rotating racks or forklift racks and can be supplied with or without a stainless steel floor.

The doors do not have a handle as they are obtained directly from the profile and are equipped with an automatic piston closing; the hinges are made of aluminium, reinforced and easily reversible.

Upon request, the machines can be supplied with panels coated in stainless steel or, on request, pre-painted in silver aluminum (NEW).

As a preventive measure, any type of chamber can be custom-made. In addition, the control panel can be customized with colors and logos, as well as stainless steel doors and hoods, to suit the customer’s needs. each brand of oven.

In the base model cell, the steam unit is available as a standard or deluxe model.

Standard power supply 400 V, three-phase neutral 50 Hz, on request we can supply special voltages.

Proofer with delayed fermentation

After many years of research and planning, Atrepan started manufacturing chambers to slow down and control fermentation.

The aim of this project was primarily to reduce the hours of night work to the end operator, but at the same time to guarantee the quality of the finished product.

The retarder proofing chamber is made of 70 mm thick modular panels covered with white galvanized sheet plastic.

For installation, the panels are connected using a simple Cam Lock eccentric hook system.

The floor is made of panels insulated with 30 mm thick polyurethane and covered with a special non-slip phenolic material.

Thanks to the resistance boiler designed and manufactured specifically for this type of cell, steam will be delivered quickly and very accurately.

A cooling system of any size is designed to guarantee high humidity and even cooling even in the case of low ventilation rates.

The control panel is made of a 3.5" TFT panel, easy to program and customizable.

The programming menu is available in 5 languages: Italian, English, German, French and Spanish.

In addition to the TFT control panel, as standard, a synoptic panel is installed on each cell to display the status of the processing cycle at any time.

As an option, it is possible to manufacture cells with an inner and outer shell of stainless steel.

 

There are four main stages in the operation of a moderator cell:

CLUTCH:

Bread after being placed inside the chamber is brought to a temperature of -5 ° C to block the fermentation process.

The temperature selected by the operator can be adjusted to -10°.

PRESERVATION:

After reaching the temperature drop temperature, the cell is brought to a temperature which guarantees its retention for a maximum of 72 hours.

This temperature can be set between 2° and -8°.

The synoptic panel of the deceleration test chambers has 4 numbered displays:

  • Temperature detection inside the chamber in the stages: Heating, Air conditioning,

  • Wake up, slow down.

Proofer with retarder Atrepan allows the operator to achieve controlled leavening, allowing dough to be kept at 4°C in a highly insulated and electronically controlled housing, blocking the production of yeast and carbon dioxide while allowing enzymes to convert carbohydrates into simple sugars.

These procedures allow the user to control the main phases of baking such as temperature, humidity, yeast and time.

The ATREPAN retarder proofer has the function of slowing down the fermentation process by holding the dough for a pre-set time up to a maximum of 72 hours.

The final stage of the program includes a very slow sourdough, which ensures a very uniform heating of the product.

The ATREPAN starter retarder cabinet is made of 18/10 stainless steel coated monocoque with 70mm high density polyurethane insulation.

The bottom is printed and features rounded and rounded corners designed to make the interior easy to clean.

The electronic control panel is easy to use, equipped with a simple and intuitive programming system, with the ability to store up to 10 working programs; programming up to a maximum of 6 days.

Tip to make the most of your retarder proofer

Before introducing the product, cool the inner surface to a temperature of 8 °C.

Introduce ideal mixers for low temperatures into the mixture (if used)

Once the dough is divided and portioned, immediately place the various blocks inside the cabinet.

Do not put the product just taken out of the retarder cabinet, let it dry to avoid crust defects.
